Of Vines and Wines: Introducing «Thiols»

With their powerful but fragile aromas, these “superior” alcohol compounds found specifically in white wines are the Holy Grail for which we quest at every harvest.

Judge for yourself: as harvest-time approaches, they’re late in expressing themselves (it’s as if the skins that hold them don’t want to give them up), and if you wait too long – they disappear!!  leaving behind sugar and cloying aromas.

In 2015, the ideal, “temperate” situation of our Sauvignon parcels meant that the grapes were able to ripen slowly and steadily and conserve their thiols, aromas and freshness.
